Instructions

  • Preheat the Oven:

    • Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish. This ensures the casserole cooks evenly and prevents sticking, making cleanup easier.
  • Prepare the Cauliflower:

    • Steam or blanch the cauliflower florets until just tender, about 5-7 minutes. Drain well and pat dry to remove excess moisture. This ensures the cauliflower is cooked through but not mushy, and removes excess water that can make the casserole watery.
    • Note: To check if the cauliflower is tender, pierce a floret with a fork – it should go through easily, indicating that it is cooked through but still has a slight bite.
  • Mix the Ingredients:

    • In a large bowl, combine the shredded chicken, buffalo sauce, and ranch or blue cheese dressing. Add the cauliflower florets, tossing to coat evenly. Season with salt and pepper. This creates a flavorful and creamy mixture, ensuring every piece of cauliflower and chicken is coated with the delicious buffalo sauce.
  • Assemble the Casserole:

    • Transfer the cauliflower and chicken mixture to the prepared baking dish. Sprinkle the shredded cheddar and mozzarella cheeses over the top. This creates a cheesy topping that melts beautifully and adds a rich, gooey layer to the casserole.
  • Bake:
