Craving a simple yet delicious dessert? This Raspberry Oreo Dessert combines creamy mascarpone, tangy Greek yogurt, and crunchy Oreos, topped with sweet raspberries. Perfect for beginners, it’s quick to make and sure to satisfy any sweet tooth!

Ingredients

Scale
  • 250g mascarpone: This creamy Italian cheese adds a rich, smooth texture to the dessert. If you can’t find mascarpone, you can substitute it with cream cheese for a slightly tangier flavor.
  • 150g Greek yogurt: Greek yogurt is thicker and creamier than regular yogurt, which helps the dessert hold its shape. You can substitute it with regular yogurt if necessary, but the texture might be a bit less firm.
  • 1 dash of lemon juice concentrate: The lemon juice adds a refreshing hint of tanginess that balances the richness of the cream. If you don’t have lemon juice concentrate, fresh lemon juice works just as well.
  • 2 level tablespoons powdered sugar: This is used to sweeten the cream mixture. You can adjust the amount based on your sweetness preference, or use honey or maple syrup for a natural sweetener.
  • 200g whipped cream: Heavy whipping cream is ideal for creating a light and fluffy texture in the dessert. If you’re looking to reduce fat content, you can use a lighter whipped topping or even whipped coconut cream as a non-dairy alternative.
  • 1 pack chilled Oreo cookies (approx. 154g): Oreo cookies are the star ingredient in this dessert. You can experiment with different types of Oreo cookies, such as the classic chocolate Oreo, golden Oreos, or even flavored variations like mint or peanut butter.
  • 300g frozen raspberries: Raspberries add a fresh, fruity contrast to the creamy layers. If raspberries aren’t available, feel free to swap them for other berries like strawberries, blueberries, or blackberries.
  • Optional: Mini Oreo cookies (Crunchis): Mini Oreos make a great garnish for this dessert and add an extra layer of crunch on top. If you prefer a simpler look, you can skip the decoration or use other types of cookies for a different effect.

Instructions

Step 1: Prepare the Oreo Cookies

Before you start, it’s best to chill your Oreo cookies in the fridge or freezer for a few minutes. This will make the cream filling firmer and the cookies easier to crush. You can either break the cookies by hand or use a food processor to crush them into small chunks.

Step 2: Thaw the Raspberries

Take the frozen raspberries out of the freezer and let them thaw at room temperature. If you’re in a rush, you can microwave them for a few seconds to speed up the process, but let them thaw naturally to preserve their shape.

Step 3: Make the Cream

In a large mixing bowl, combine the mascarpone, Greek yogurt, powdered sugar, and a dash of lemon juice. Mix everything together until smooth and creamy. Then, whip the cream separately until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture. Be gentle here to maintain the fluffy texture of the whipped cream.

Step 4: Layer the Dessert

Now, it’s time to assemble the dessert! In small dessert glasses, start by layering the crushed Oreos at the bottom. Follow with a layer of the creamy mascarpone mixture, then add a layer of thawed raspberries. Repeat these layers until your glasses are filled.

Step 5: Garnish and Chill

Top each dessert with a few whole raspberries and mini Oreos for decoration. Then, cover the glasses with plastic wrap and refrigerate for about 1 hour to allow the flavors to meld together and the dessert to firm up. Once chilled, your dessert is ready to serve!

Notes

  • Chill the Cookies: As mentioned earlier, chilling the Oreo cookies makes them easier to crush and helps prevent them from becoming too soft when layered.
  • Avoid Overwhipping the Cream: When you’re whipping the cream, be careful not to overwhip it. If you whip it for too long, it can turn into butter. Stop once you see stiff peaks form.
  • Don’t Skip the Chilling Time: While this dessert may be tempting to eat immediately, chilling it in the fridge for at least an hour is essential for the flavors to come together and for the texture to set.
