  • 1 pound maple breakfast sausage
  • 8 large eggs
  • ¼ cup milk

  • 1 cup Colby Jack cheese, shredded
  • 6 croissants, sliced open
  • 2 tablespoons mayonnaise
  • 2 tablespoons mustard or Dijon mustard
  • 2 tablespoons maple syrup
  • Chives for garnish, minced (optional)

Instructions

  • Preheat the Oven and Cook the Bacon: Preheat your oven to 420°F (215°C). Line a cookie sheet with tin foil. Lay the bacon slices on the cookie sheet and bake until crisp, about 10-15 minutes, depending on the thickness of the bacon. Remove the bacon to a paper towel-lined plate to drain. Cooking the bacon in the oven ensures even cooking and minimizes mess.
  • Cook the Sausage: Prepare the breakfast sausage by forming it into 6 even rectangles to better fit onto the croissants. Heat a skillet over medium heat. Cook the sausages for about 7-8 minutes per side, or until cooked through. Remove the sausages from the skillet and cover them with a lid to keep them warm. Forming the sausage into rectangles helps them fit better on the croissants.   
  • Prepare the Eggs: In a medium bowl, whisk together the eggs, milk, salt, pepper, and shredded cheese. Set aside in the refrigerator. Whisking the eggs thoroughly ensures a smooth and fluffy texture.
  • Toast the Croissants: Heat the oven to broil. Place the croissants on a cookie sheet, opened up, and place them under the broiler to toast. Watch closely, as they can burn quickly. Remove the toasted croissants from the oven and set aside. Broiling the croissants adds a crispy texture and warm them through.
  • Cook the Eggs: Heat a skillet over medium-high heat and spray it with cooking spray. Once hot, add the egg mixture and cook, stirring often with a rubber spatula, until cooked through. Remove the cooked eggs from the heat. Stirring the eggs often prevents them from sticking to the skillet and ensures even cooking.
  • Make the Maple Mustard Sauce: In a small bowl, whisk together the mayonnaise, mustard, and maple syrup until well combined. Whisking the sauce thoroughly ensures a smooth and creamy texture.
