Enjoy a quick and easy baked cod recipe with Greek flavors. Perfect for a fast weeknight meal.

Ingredients

  • Cod fillets (680g)
  • Garlic (5 cloves)
  • Parsley (1/4 cup)
  • Lemon juice (5 tbsp)
  • Butter (2 tbsp)
  • Flour (1/3 cup)
  • Coriander powder (1 tsp)
  • Olive oil (5 tbsp)
  • Paprika (3/4 tsp)
  • Cumin (3/4 tsp)
  • Salt (3/4 tsp)
  • Pepper (1/2 tsp)

Instructions

  • Prepare the Oven and Mixtures (The Preparation Process):
    • Preheat your oven to 205 degrees Celsius (400 degrees Fahrenheit).
    • In a shallow bowl, mix together the lemon juice, olive oil, and melted butter. Set aside.
    • In another shallow bowl, combine the plain flour, sweet Spanish paprika, ground cumin, sea salt, and black pepper.
    • Place this bowl next to the lemon juice mixture for easy access during the coating process.
  • Coat the Cod Fillets (The Coating Choreography):
    • Pat the cod fillets dry with paper towels to remove any excess moisture.
    • Dip each fillet into the lemon juice mixture, ensuring each piece is fully coated.
    • Then, dredge the fillets in the flour mixture, making sure to shake off any excess flour.
    • Keep the lemon juice mixture handy, as it will be used later.
  • Sear the Cod Fillets (The Searing Strategy):
    • Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat until the oil is shimmering but not smoking.
    • Carefully add the coated fish fillets to the skillet and sear them for a couple of minutes on each side, just enough to lightly color them.
    • Remove the skillet from the heat once all fillets are seared.
  • Add Flavor and Bake (The Baking Brilliance):
    • To the reserved lemon juice mixture, stir in the minced garlic to combine well.
    • Drizzle this flavorful mixture over the seared fish fillets in the skillet.
    • Place the skillet in the preheated oven and bake the fish for about 10 minutes.
    • It’s a good idea to start checking for doneness a bit earlier to prevent overcooking; the fish is done when it flakes easily with a fork.
  • Serve and Enjoy (The Serving Sensation):
    • Once the fish is perfectly cooked, remove the skillet from the oven with care as it will be hot.
    • Allow the fish to rest for a moment before serving.
    • Enjoy your delicious, flavorful baked cod fillets with your favorite side dishes.

Notes

  • Check cod for flaking.
  • Sear for a crust.
  • Don’t burn garlic.
