  • 2 tablespoons butter
  • ½ regular lemon juice

Optional Glaze:

  • ½ cup powdered sugar
  • 1 tablespoon almond milk

Instructions

  • Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C) for 5 minutes. Preheating ensures even cooking and helps the fritters crisp up nicely.
  • Prepare the Apples: Peel, core, and chop the apples into small, even pieces. Mix them with the lemon juice and melted butter. Setting the apples aside with lemon juice prevents them from browning.
  • Combine Dry Ingredients: In a mixing bowl, mix together the gluten-free flour, brown sugar, baking powder, salt, and pumpkin spice. Whisking ensures even distribution.
  • Combine Wet Ingredients: In a separate bowl, gently beat the eggs. Stir in the vanilla extract, then gently fold in the apples.
  • Combine Wet and Dry Ingredients: Mix the dry ingredients into the wet ingredients until just mixed. Avoid over-mixing, as this can result in tough fritters. If the batter is too thick, thin it with a little milk.
  • Shape the Fritters: Use a spoon to spoon out heaping spoonfuls of apple fritters onto the preheated air fryer basket. Spray the tops with coconut oil spray. Spraying helps them brown and crisp up.
  • Air Fry: Air fry for 3-4 minutes per side, or until golden brown and cooked through. The cooking time may vary depending on your air fryer.
  • Cool and Glaze (Optional): Allow the fritters to cool for a few minutes before glazing. To make the glaze, mix together the powdered sugar and almond milk. Drizzle over the fritters.
