Ingredients
Scale
Dry Ingredients:
1.5 cups gluten-free flour
¼ cup brown sugar
2.5 teaspoons baking powder
1 teaspoon salt
1 teaspoon pumpkin spice
Wet Ingredients:
2 large eggs
2 teaspoons vanilla extract
3 large apples
2 tablespoons butter
½ regular lemon juice
Optional Glaze:
½ cup powdered sugar
1 tablespoon almond milk
Instructions
Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C) for 5 minutes. Preheating ensures even cooking and helps the fritters crisp up nicely.
Prepare the Apples: Peel, core, and chop the apples into small, even pieces. Mix them with the lemon juice and melted butter. Setting the apples aside with lemon juice prevents them from browning.
Combine Dry Ingredients: In a mixing bowl, mix together the gluten-free flour, brown sugar, baking powder, salt, and pumpkin spice. Whisking ensures even distribution.
Combine Wet Ingredients: In a separate bowl, gently beat the eggs. Stir in the vanilla extract, then gently fold in the apples.
Combine Wet and Dry Ingredients: Mix the dry ingredients into the wet ingredients until just mixed. Avoid over-mixing, as this can result in tough fritters. If the batter is too thick, thin it with a little milk.
Shape the Fritters: Use a spoon to spoon out heaping spoonfuls of apple fritters onto the preheated air fryer basket. Spray the tops with coconut oil spray. Spraying helps them brown and crisp up.
Air Fry: Air fry for 3-4 minutes per side, or until golden brown and cooked through. The cooking time may vary depending on your air fryer.
Cool and Glaze (Optional): Allow the fritters to cool for a few minutes before glazing. To make the glaze, mix together the powdered sugar and almond milk. Drizzle over the fritters.
